Stewed Fruit Compote

This is a perfect First Days Food for new parents. It's iron-rich, lymph moving, and blood building goodness. Perfect for the parent worried about their first bowel movement postpartum! :)


INGREDIENTS

  • Two Apples, peeled, chopped

  • Two Pears, peeled, chopped

  • Two Medjool Dates, pitted, chopped

  • 1 1/2Tsp Fresh Ginger, minced

  • 1/4 Tsp Clove

  • 1/2 Tsp Cinnamon

  • 1/2 Tsp Cardamom powder (or 3 pods)

  • 1 Lemon

  • 2 TBS Black Strap Molasses

  • 2 TBS Pure Maple Syrup

  • 1/2 TBS Ghee

  • Filtered Water

  • Optional: Star Anise, Apricot, Cranberry, Raisins, Goji Berry


2 - 3 Servings



METHOD

  1. Cut fruit, out all ingredients (except lemon & maple) into a pot.

  2. Squeeze half a lemon over fruit

  3. Fill with water until fruit is covered about half way.

  4. Cover, bring to a gentle happy simmer.

  5. Lower temp to just barely bubbling, keep covered for about an hour or so.

  6. Check periodically to make sure there is still some water in pan.

  7. Pull off heat and mix in maple.

NOTES

  • This is great to eat on day 1 or 2.

  • This can easily be prepared ahead and frozen, just remember to take out of freezer the day before (or better yet bring to hospital).

  • Gently, (slow and low) reheat.

  • Seasonal berries are great in here too.

  • Eat plain, throw on top of grounding oats or any breakfast porridge.
