Ginger Scallion Oil

Unexpectedly loved this when I was playing around and researching what to do with a bunch of extra green onions.

1 Cup Scallion (Green Onion), whites + greens, finely chopped, tightly packed

2 TBS Ginger, peels and finely minced

1/2 TSP Salt

1/2 Cup Sesame Oil, (scant a 1/2 cup)

  1. Peel and finely grate ginger, the finer the better.

  2. Finely chop Green Onion

  3. Mix Together, Add Salt

  4. Slowly warm oil up on stove, do not let it hit the smoke point. Essentially you can test the oil with a small piece of onion - see if it sizzles and then you know it's ready!

  5. Quickly pour warm/hot oil over onion + ginger mixture. (Make sure it's in a heat proof bowl)

  6. Let cool, then store in fridge.

This will add a little zip to nearly anything.

  • Top off congee, kitchari, or any soup really.

  • Mix in with rice or quinoa to layer on flavor.

  • Top any meat that needs a pick me up.

  • Drizzle over some mashed avocado
