Cilantro Lime Rice

INGREDIENTS:

  • 2 cups basmati 

  • 2 cups vegetable broth

  • 3/4 cup water

  • 2 TBS coconut oil

  • 3 TBS fresh juice of lime

  • Zest of one lime 

  • Approx 1/2 cup of fresh chopped cilantro (to taste level)

  • 1/2 teaspoon salt


INSTANT POT METHOD:

  • Using saute, warm coconut oil, add rice and broth.

  • Mix together for one minute on saute.

  • Add remaining items EXCEPT cilantro and 1 TBS of lime

  • Set on high pressure for 6 minutes, once done, let naturally release for another 6 minutes, then release remaining pressure.

  • Fluff rice and add cilantro and the rest of the lime juice.

WHY:

In general, brown rice is considered more nutrient rich than white rices however both spike glucose levels and brown can be tougher to digest. If blood sugars aren't an issue, white rice will do the trick!
